Summer goodness

I simply love everything about summer... including having fresh Black Bean & Corn Salsa on hand every weekend. 

There aren't many things that I prepare that the people who partake actually ask me for the recipe. However, this salsa is the exception.

It's too bad I don't have a picture to attach with this post... looks like you will have to make it yourself to get the visual!  Not only does it taste awesome, it looks festive, too!

Here we go - the recipe:

2 - cans black beans, drained & rinsed
2 - cans golden kernel corn, drained & rinsed
(fresh corn cut off the cob would be AWESOME, too!)2 - cans Rotel, Original (do not drain)
2 - fresh tomatoes, diced
1/2 - purple onion, diced
Approx. 3 Tbsp. Tastefully Simple Simply Salsa seasoning mix
Mix all together and let sit overnight in refrigerator to chill.
Serve anyway you please!
With tortilla chips or wrapped with cheese in a flour tortilla... the options are endless.
